Yes, I love French food. Rich, meaty plats are divine —but too much offal can really throw your system for a loop. The antidote to this is bright, clean flavors and satisfying, nurturing dishes. In Paris, I get this respite at Higuma. One plate of gyoza can counter all of those livers and gizzards and get me back to neutral, fast. I think of this place as a reset button transporting me back to my factory default settings. Obviously I’m not the only one who feels this way, as Higuma has a new second location.
